THE WAY WE DO IT
We make all our mead using only top quality ingriedients including local raw honey, fresh local fruit (cherries, blueberries, peaches, apples, etc.) and whole spices (cinnamon sticks, cloves, vanilla beans, etc.).
We do not mass produce, use lesser quality ingredients or rush the process. We make in small five gallon batches which produces about twenty-five 750ML bottles.
Every week we make a new batch and we let age six months before bottling then another six months in the bottle and we taste and sample periodically during the year long process.
Traditional Mead - Our traditional meads use just water, honey and yeast with no fruits or spices. We make traditional mead in a dry, medium and sweet style. Presently we are using seven different honey varieties.
Metheglin - A metheglin is a mead with the addition of spice or spices such as cinnamon, cloves, nutmeg, vanilla bean, juniper berries, ginger, rosemary., etc. The mead may contain a single spice or a variety of spices.
Melomel - A melomel is a mead with the addition of fruit(s). Some of our favorites include blueberries, blackberries, cherries, peaches, apples, grapes, raisins and strawberries.
OUR SPECIAL BLENDS
HONEY DEW – My wife tasted this master-piece using Raw WildFlower Honey with split Vanilla Beans and said “Honey, you will have to do some more of this”. So, Honey DEW, what a perfect name for this well-rounded mead with a perfect blend of honey and vanilla flavors. Limited Availability.
KISS MY ACE – After my buddy, Max Cannon, tried our Orange Blossom Honey mead with Cinnamon and Cloves he said “You gotta Ace here”. I was so happy I kissed the bottle (not him). This is one of our most popular and only four bottles left so claim yours now – you might just kiss it also.
SHUT MY MOUTH - When my son Layne (yes he is over 21) tried this mead made with WildFlower Honey, Fresh ground nutmeg and a split vanilla bean he said "Shut my mouth or I'll drink the whole bottle". One of our best yet! Only a few bottles left of this perfectly blended mead.
YOU’RE MY EVERYTHING – So Judy said she heard me in the meadery talking to my meads and I was saying things like “You’re my everything” , “Miss You” “Looking Good” - just various sweet nothings. Do I look like an idiot who would say such things to some inanimate objects? Hope Not. However I do have a favorite mead made with Brazilian Pepper Honey and Cascade Hops that I think a lot about at times.
IT'S A WEINER - When my assistant mead maker, Ben Pootin, tasted this mead made with Orange Blossom Honey, Fresh Blackberries and a Cinnamon Stick he shouted across the room to me "It's a winner" and I misunderstood him to say Weiner not Winner (maybe I was thinking about the pervert in New Your who ran for Mayor). Anyway this mead should stand out (like Weiner's weiner?)
SWEET THANG - We added a little extra honey to this one to bring out the flavor of this prize Tupleo Honey and added a touch of fresh ground nutmeg to round out the profile. It goes down easy so watch out or you may drink the whole bottle at one sitting. Every time I hear Loretta Lynn sing "Sweet Thang" I think about this mead.
GOD JUICE - This perfect blend of Orange Blossom Honey, fresh PineApple Juice and Coconut Milk makes for a Superior Mead fit for a King (or a Queen). My wife liked it so much she calls it "God Juice" and I noticed she has been spending a lot of time in the tasting room giving it a try.
